This pickle is basically from Gujarat. And it is very easy to prepare. In gujrati the people called it as CHUNDO.

RECIPE:-
1 Take dry raw peel mangos.
2 Shred the mangoes
3 Heat oil and cook mangoes and add spices, sugar and mix it
4 Cook mango When the sugar syrup starts to cook, you will see the mixture bubbling.
5 Mix all spices and mixture at room temperature.
6 Serve Chunda with your meal and Enjoy!

So lets see the Recipe of this authentic Pickle:-
For this amla recipe we need alma, Turmaric, Red chilli powder,green chilli,and Some Salt.
1 Wash amla and dry ith some cloth Mak a cut in each amla otherwise it may burn while heating in oil.
2 take powder of mustard and a pinch pf methi seeds and make a fine powder in a mixer jar.
3 Than heat the oil fry the amla on a medium heat the amla until it gets light golden. and in that add some chopped garlic. fry them for 2-3 min. turn off the flame. make it cool of 30-40 mins.
4 Than again heat the pan Add the oil and some spices powders, Mix everythig nicely. then cool the mixture fully, after that add some lemon juice mix all completely.
5 Store it in a air tight glass jar. After 3 to 4 days, the amla will release moisture. the pickle must be oily so if neded you can add some oil salt and some lemon and here your Amla pickle is ready enjoy it with your meal.

First of all lets see what we need to make this recipe:-
1 First will take garlic some Fenugreek seeds, Mustard, Re chilli powder, Turmuric, Asafoetida , lemon, oil, and some pinch of salt.
2 First separate the Garlic cloves from the garlic bulb. then put them in water for some time so that the peels can come out easily.Then keep them in a bowl.
3 Now put fenugreek seeds, fennel and mustard in a mixer jar and grind them and prepare the powder.
4 Heat oil and puct garlic into it and fry until it get light golden brown ( Dont burn)
5 Add the mixer of all the spices we have grind and mix it with garlic Now add salt as per taste and mix and cook for 4-5 minutes.
6 Your garlic pickle Wwith full of taste and nutrition is ready. You can store it in a air tight jar for long and enjoy with your tasty meal.
